Hacienda Sonora is a farm located in the Central Valley of Costa Rica, at the foot of the world renowned Poas Volcano. Sonora's coffees grow in an environment surrounded by exotic trees and other vegetation, providing a great condition for quality, as well as improving the chemistry of the already naturally rich volcanic soil. Don’t let the name fool you - there isn’t any honey to be found in this coffee. The ‘honey’ in Sonora Honey refers instead to the honey processing method, which leaves the coffee cherry mucilage intact on the bean as it dries, lowering the acidity of the final product. This results in an incredibly balanced cup, and it is why we like to feature these beans throughout the entirety of the year if possible.
